Sheet Pan Frittata with Pumpkin & Ricotta

When pumpkin is in season, it makes it into my weekly shop without fail.

There are two obvious things I tend to do with it: pumpkin soup and roasted pumpkin wedges. I love both and make them constantly. But recently I’ve found myself making this about once a fortnight: a sheet pan pumpkin frittata.

It’s nothing groundbreaking. It just makes sense.

What I love is that you roast the vegetables in the same pan you’re going to make the frittata in, which means you automatically have the right amount of vegetables for the pan. The pan is already oiled. You pour the eggs over, put it back in the oven and you’re done.

This is exactly my kind of Slow Food Now, Fast Food Later food because it’s an actual substantial meal that also works cold, in a lunchbox, grabbed on the run or quickly reheated.

I use a dozen eggs and, at the moment, pumpkin is my favourite version, but obviously you could do this with almost any roasted seasonal vegetable.

One little egg tip: I use a blender to mix mine. You absolutely don’t have to—a whisk is fine—but if you do use a blender, do not over-blend them. We’re not making a smoothie here. Truly, I won’t even go beyond about eight seconds. I aim for seven SECONDS! Overmixing can give you that tougher, spongy texture rather than something soft and tender.

INGREDIENTS
  • ¼–½ pumpkin, peeled and cut into roughly 2 cm slices
  • 1 red onion, peeled and quartered
  • ¼ cup extra virgin olive oil
  • 12 eggs
  • ⅓ cup cream
  • 250 g firm ricotta (I use Mungalli Creek)
  • Salt and freshly ground black pepper, to taste
METHOD
  1. Preheat the oven to 180°C.
  2. Place the pumpkin and red onion on a medium sheet pan. Drizzle generously with the olive oil, season with salt and pepper and toss well to coat. You want the vegetables fairly close together—they’ll shrink as they roast.
  3. Roast for 35–40 minutes, or until the pumpkin is tender and starting to caramelise around the edges.
  4. Remove the tray from the oven and reduce the temperature to 150°C.
  5. Meanwhile, combine the eggs and cream and season with salt and pepper. Whisk until just combined, or blend for no more than 8 seconds.
  6. Pour the egg mixture directly over the roasted vegetables, then dollop the ricotta over the top in generous chunks.
  7. Return the tray to the oven and bake for around 30 minutes, checking from the 25-minute mark. It’s ready when the eggs are just set through the centre. Every oven is different, so avoid cooking it longer than it needs.
  8. Let the frittata sit for a few minutes before slicing. Serve warm, at room temperature or cold from the fridge.
