Basic But Delicious Beef Burgers

A really good beef burger recipe to have in your back pocket when you’ve got a packet of beef mince. These are simple, full of flavour and just as good eaten cold from the fridge as they are served hot for lunch or dinner.

If I have it, I love to use an offal blend from The Food Farm, which includes organ meats like beef liver. It’s an easy way to incorporate more organ meats into our meals without changing what we’re cooking. Otherwise standard beef mince works too.

I make a big batch of these because they’re useful for just about everyone in the family. I often grab one cold from the fridge as a quick snack or meal (mum life means I frequently need something I can eat one-handed and standing up!). They’re equally good reheated for a filling lunch, or served to the kids with some chopped vegetables and homemade mayo.

INGREDIENTS
  • 1 kg beef mince (or beef and offal blend)
  • 1 medium onion, finely chopped (or 2 shallots)
  • 2 cloves garlic, crushed
  • 2 eggs
  • 2 tsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • ½ tsp dried oregano (or finely chopped fresh oregano)
  • 1/4 cup chopped parsley (optional)
  • Olive oil, tallow or ghee, for cooking
METHOD
  1. Add the beef mince, onion, garlic, eggs, Dijon mustard, smoked paprika, salt and oregano to a large mixing bowl.
  2. Using your hands or a spoon, gently mix until just combined. Avoid overworking the mixture.
  3. Shape into approximately 16 small patties.
  4. Heat a little olive oil or ghee in a large frying pan over medium-high heat, or preheat your BBQ.
  5. Cook the patties in batches, turning once browned, until cooked through. Cooking time will depend on their thickness.
