The kind of thing I love having in the fridge: beautifully spiced, fall-apart lamb that took four hours to cook, but about five minutes to turn into lunch or dinner.

Spiced Slow Cooker Lamb

If there’s one thing I love having in the fridge, it’s a batch of slow-cooked meat that can become lunch or dinner in about five minutes.

This lamb may look a little plain. Like, where are the vegetables? The herbs?! But that’s actually the point.

I have a way of cooking that I call Slow Food Now, Fast Food Later. Rather than meal prepping complete meals, I cook in elements – delicious things that take time to make, but can become several different meals.

I deliberately leave out the greens and extra vegetables so I can add them fresh when we eat. I might have the lamb with fermented vegetables for lunch, reheat some with peas for my toddler, then serve it the next night with rice, roasted pumpkin and a crunchy cabbage salad.

I make this in my Breville Fast Slow Go, so I can brown the lamb using the sear function, then switch it straight over to slow cook.

Spiced Slow Cooker Lamb

A very simple lamb recipe perfect for weeknights.

INGREDIENTS
  • 1 kg diced lamb shoulder
  • 1 onion, roughly chopped
  • 3 garlic cloves, peeled and left whole
  • 1 tbsp seven spice baharat*
  • 1 tbsp tomato paste
  • 1 cup beef stock or beef bone broth
  • Olive oil, for browning
  • Sea salt, to season
METHOD
  1. Set the Breville Fast Slow Go to Sear on the highest setting. Add a generous drizzle of olive oil.
  2. Season the lamb generously with salt. Working in two batches, brown the lamb well on all sides. Take your time here, you want plenty of deep golden colour. Remove the browned lamb and set aside. And make sure not to overcrowd the lamb pieces.
  3. Once all the lamb is browned, add it all back into the pot along with the onion and whole garlic cloves.
  4. Add the spice mixture and tomato paste and stir to coat everything.
  5. Pour in the stock or broth.
  6. Set to Slow Cook – High and cook for 4 hours, or until the lamb is beautifully tender.
Notes
  • *No baharat? Use 1 tsp ground cumin, 1 tsp ground coriander, ½ tsp cinnamon, ¼ tsp black pepper and a small pinch each of ground cloves and nutmeg.
  • I use a slow cooker with a sear function. If yours doesn't have this, simply brown the lamb in a hot pan on the stove, transfer to the slow cooker along with the remaining ingredients and follow the recipe as directed.
