Veggie Fritters With Odi
These fritters came about out of necessity (as my most repeated recipes do). When I meal prep, I prioritise things that can become actual meals rather than sweets, treats or snacky things. Because I hate the feeling when I’ve spent time “prepping”, yet have nothing to make a quick lunch for myself or my kids.
If I have nothing prepared, it’s very easy for a toddler day to become fruit, yoghurt, crackers, repeat. There’s nothing wrong with any of those foods, but when I can, I like having something more substantial and nutrient-dense ready to go. Because I definitely don’t have time to make things like this in the moment, which is why I make them in advance.


So one night, knowing I needed something decent for a quick meal or lunchbox the next day, I threw these together with what I had in the fridge. They were so good that they’ve stuck around, and I happily eat them myself too.
They’re sturdy enough to hold in one hand, as some of my toddlers best meals are eaten (high chairs are not always a yes), and make a very easy addition to a lunchbox.


In this recipe, I’ve added a spoonful of Odi Meal Booster, which is a convenient nutrition all-rounder made from nutrient-dense whole foods including spinach, broccoli, pea leaf, carrot and an organ blend (for well absorbed iron, needed for kids!). It adds naturally occurring iron alongside its food-based cofactors, plus fibre and greens, without added sugars, fillers or synthetic fortification. And importantly, it actually adds good flavour to savoury food like these fritters.

INGREDIENTS
- 1 medium zucchini, grated
- 1 medium carrot, grated
- 2 eggs
- 1 heaped tablespoon cassava flour
- 1 tablespoon Odi Meal Booster
- Pinch of sea salt
- Coconut oil or ghee, for frying
METHOD
- Grate the zucchini and squeeze out as much excess liquid as you can using clean hands, a sieve or a tea towel.
- Add the zucchini and grated carrot to a bowl with the eggs and salt. Mix well.
- Stir through the cassava flour and Odi Meal Booster until everything is well combined.
- Heat a little coconut oil or ghee in a frying pan over medium heat.
- Spoon small portions of the mixture into the pan and gently flatten into fritters.
- Cook until golden underneath, then flip and cook the other side until golden and cooked through.
Notes
- Every cassava flour is slightly different. If your mixture is still quite wet, add another spoonful.
